2021 Le Cadeau Chardonnay
The 2021 Le Cadeau Chardonnay is crisp, mineral-driven, with just a touch of oak – all in perfect balance – produced entirely from fruit grown in rocky volcanic basalt. Harvested in September 2021, our estate-grown chardonnay grapes were carefully processed and fermented in stainless steel before being transferred to barrels. The wine aged for 14 months in neutral French oak, with an additional 5 months of aging in stainless steel on lees. Both the aromatic profile and palate complexity are developed through the vineyard-driven attributes of clonal diversity, soil diversity, and sunlight "aspect."
