2017 Blanc de Noir Sparkling
Cool Spring temperatures in 2017 set up the perfect balance of acid and physiological ripeness to harvest 6 tons of Pinot Noir in the early morning of September 15th. The estate grapes were carefully pressed, minimizing skin contact to achieve a true "Blanc de Noir", and fermented in both stainless steel and French oak barrels. Our sparkling is made in an artisanal "growers style" – fermentation occurred with native yeast, followed by aging en tirage for over 4.5 years. The final wine was disgorged June 27, 2022.
Tasting Notes: Crisp pear nose with a hint of flint, followed by flavors of fresh green apple and lemon zest, and just the slightest touch of cherry pastry on the finish.
